SPON is flipside wing to The Odd Culture Group for the inner west suburb of Newtown. The heady new wine bar and snifter shop on King Street is shaking things up by handing over the by-the-glass selection of drinks to their guests in their new hybrid space.

The team at SPON have a range of eclectic and rare wines, ales and other fascinating beverages wieldy to explore by-the-glass, takeaway or online.

The idea for SPON was born from the exploration of spontaneous fermentation; the hallmark theme that the group has wilt so well known for. Located in what used to be the Odd Culture Snifter Shop, the new space is a completely reimagined concept that sets out to deconstruct the frictional elements of discovering, tasting and enjoying a long list of new and rare products that the team has been collating and cellaring over the years.

“We loved having the snifter shop but we have wanted to evolve and expand the concept for a long time now,” says CEO of the Odd Culture Group James Thorpe

The intention is to create a dynamic and exploratory wits for all kinds of guests who are keen to try a range of variegated products at a much increasingly wieldy forfeit and availability than you’d normally find.

SPON features a daily rotational open-bottle list of 12 (primarily) wines, large-format ales and ciders, with two wines chosen by the house (a white and red) and the other spots to be chosen by the guests over the undertow of the day. Any snifter in the shop can be nominated and will then be misogynist by the glass for anyone to try until it runs out.

Guests can nab a spot to yack to the knowledgeable staff at the bar inside, or can perch themselves in front of the window overlooking King Street with charcuterie. Snacks designed to complement SPON drinks selection will be coming straight out of the Odd Culture kitchen just lanugo the road.
